Jalebi is a popular Indian sweet that is made by deep-frying a wheat flour batter and then soaking it in a sugar syrup. Here's a simple recipe for making jalebi at home
Ingredients:
1 cup all-purpose flour
1 tablespoon besan (gram flour)
1 tablespoon semolina (sooji)
1/4 teaspoon baking powder
1 pinch baking soda
1/2 cup yogurt
1/2 cup warm water
1 teaspoon lemon juice
1/2 teaspoon saffron strands (optional)
2 cups sugar
1 1/2 cups water
Oil for deep frying
Instructions:
1 In a mixing bowl, combine the all-purpose flour, besan, semolina, baking powder, and baking soda.
2 Add yogurt and warm water to the dry ingredients and mix well to form a smooth batter. Add lemon juice and saffron strands (if using) and mix again.
3 Cover the bowl and keep it in a warm place for 10-12 hours or overnight to ferment.
4 In a saucepan, combine sugar and water and bring it to a boil. Once the sugar dissolves, reduce the heat and let it simmer until the syrup thickens to a one-string consistency.
5 Heat oil in a deep frying pan over medium heat.
6 Fill the jalebi batter in a squeeze bottle or a piping bag with a small nozzle.
7 Squeeze the batter in hot oil in circular motion to form small spiral shapes.
8 Fry the jalebis until they turn golden brown and crisp.
9 Remove the jalebis from the oil and immediately dip them in the sugar syrup.
10 Let the jalebis soak in the syrup for 1-2 minutes and then remove them using a slotted spoon.
11 Serve hot or warm jalebis garnished with some chopped nuts or saffron strands (optional).
