Simple Salad:
Ingredients:
1/2 head of lettuce, chopped
1 large cucumber, chopped
2 medium-sized tomatoes, chopped
1/2 red onion, thinly sliced
Salt and pepper, to taste
2 tbsp olive oil
1 tbsp vinegar (optional)
Instructions:
1 Wash and chop the lettuce, cucumber, tomatoes, and onion.
2 In a large bowl, mix together the chopped vegetables.
3 Add salt and pepper to taste.
4 Drizzle olive oil over the vegetables and toss to coat.
5 Add vinegar (if using) and toss again.
6 Serve immediately.
Raita:
Ingredients:
1 cup plain yogurt
1/2 cup finely chopped cucumber
1/2 cup finely chopped tomato
1/4 cup finely chopped red onion
1/4 tsp ground cumin
Salt and pepper, to taste
Fresh cilantro, chopped, for garnish (optional)
Instructions:
In a medium-sized bowl, mix together the yogurt, cucumber, tomato, and red onion.
Add cumin, salt, and pepper to taste, and stir to combine.
Cover the bowl with plastic wrap and chill in the refrigerator for at least 30 minutes to allow the flavors to meld together.
When ready to serve, transfer the raita to a serving dish and garnish with fresh cilantro (if using).
