Ingredients:
1 cup water
1/2 cup unsalted butter
1 tablespoon granulated sugar
1/4 teaspoon salt
1 cup all-purpose flour
3 large eggs
Vegetable oil, for frying
1/2 cup granulated sugar
1 teaspoon ground cinnamon
Instructions:
1 In a medium saucepan, combine water, butter, sugar, and salt. Bring the mixture to a boil over medium-high heat.
2 Remove the saucepan from heat and add the flour all at once. Stir with a wooden spoon until the mixture is smooth.
3 Place the saucepan back on low heat and stir the mixture for 2-3 minutes until it forms a ball and starts to pull away from the sides of the pan.
4 Remove the saucepan from heat and let the mixture cool for 5-10 minutes.
5 Add eggs one at a time, stirring until each egg is fully incorporated into the mixture before adding the next.
6 Fill a large heavy-bottomed saucepan or a deep fryer with about 2-3 inches of vegetable oil and heat over medium-high heat until it reaches 375°F.
7 Fill a piping bag with a star-shaped tip with the churro dough.
8 Squeeze the piping bag to release the dough into the hot oil. Use a knife or scissors to cut the dough off the piping bag, leaving a 4-6 inch churro.
9 Fry the churros for 2-3 minutes, flipping them occasionally, until they are golden brown.
10 Remove the churros from the oil with a slotted spoon and place them on a paper towel-lined plate to remove excess oil.
11 In a small bowl, mix together the sugar and cinnamon.
12 Roll each churro in the cinnamon sugar mixture until it is coated evenly.
13 Serve the churros warm with chocolate sauce or dulce de leche for dipping.
