1 tablespoon garlic paste

1 tablespoon green chilli paste

1 tablespoon coriander powder

1 tablespoon cumin powder

1/2 tablespoon garam masala

1/2 tablespoon red chilli powder

1/4 cup fresh coriander, chopped

1/4 cup fresh mint, chopped

1 egg

2 tablespoons gram flour (besan)

Salt to taste

Oil for cooking

Lemon wedges

Onion rings

Coriander leaves

Mint leaves

For serving:

Mint yogurt chutney

Instructions:

1 In a large bowl, add the ground beef or lamb, onion, ginger paste, garlic paste, green chilli paste, coriander powder, cumin powder, garam masala, red chilli powder, fresh coriander, fresh mint, egg, gram flour, and salt. Mix everything together until well combined.

2 Cover the bowl with a cling wrap and refrigerate for at least an hour to let the flavors meld together.

3 Preheat the oven to 180°C (350°F) or preheat a grill or charcoal fire.

4 Divide the meat mixture into equal portions and shape each portion around a skewer, making long sausage-shaped kebabs.

5 Brush the seekh kebabs with oil on all sides.

6 Place the skewers on a baking sheet or a grill rack and cook for 10-15 minutes or until the kebabs are cooked through and golden brown, turning the skewers occasionally to cook all sides.

7 Once the kebabs are cooked, remove them from the oven or grill and let them rest for a few minutes.

8 Serve the seekh kebabs hot, garnished with lemon wedges, onion rings, coriander leaves, and mint leaves, and accompanied by mint yogurt chutney.
