                               Here's a recipe for making Gulab Jamun step by step:

Ingredients:

For the Gulab Jamu

1 cup koya/mawa (dried whole milk)

3 tablespoons all-purpose flour (maida)

1/4 teaspoon baking powder

2 tablespoons ghee

A pinch of salt

2-3 tablespoons milk (as needed to knead the dough)

Oil or ghee for frying

For the Sugar Syrup:

1 1/2 cups sugar

1 1/2 cups water

A few strands of saffron (optional)

1/2 teaspoon cardamom powder

Instructions:

1- In a large mixing bowl, crumble the khoya/mawa.

2-Add all-purpose flour, baking powder, ghee, and a pinch of salt. Mix well.

3-Gradually add milk and knead the mixture into a smooth and soft dough. Be careful not to over-knead the dough.

4-Make small balls out of the dough, ensuring there are no cracks on the surface. The size of the balls should be slightly smaller than a golf ball.

5-Heat oil or ghee in a deep-bottomed pan on medium-low heat.

6-Once the oil is hot, gently add the prepared dough balls into the oil, making sure they are not overcrowded. Fry until they turn golden brown in color, stirring occasionally.

7-Remove the fried Gulab Jamuns with a slotted spoon and place them on a kitchen paper towel to absorb any excess oil.

8-In a separate pan, add sugar and water and heat until the sugar dissolves completely.

9-Add saffron strands and cardamom powder to the sugar syrup and let it simmer for about 5-7 minutes.

10-Turn off the heat and add the fried Gulab Jamuns into the sugar syrup. Let the Gulab Jamuns soak in the syrup for at least 30 minutes to an hour, depending on your preference.

11-Once the Gulab Jamuns have absorbed enough syrup and have become spongy, remove them from the syrup.

12-Garnish with chopped nuts such as almonds and pistachios if desired.

13-Serve hot or cold, and enjoy your homemade Gulab Jamuns!
