Kalaygy is a popular Afghan dish that consists of cooked lamb or beef in a rich tomato-based sauce, often served with rice or naan bread. Here is a step-by-step recipe for making this delicious dish:

Ingredients:

1 lb lamb or beef, cut into bite-sized pieces

1 onion, finely chopped

3 garlic cloves, minced

2 tablespoons vegetable oil

2 tablespoons tomato paste

1 teaspoon ground cumin

1 teaspoon ground coriander

1 teaspoon paprika

1/4 teaspoon cayenne pepper

1/4 teaspoon ground turmeric

2 cups water

Salt and black pepper to taste

Instructions:

1 In a large saucepan or Dutch oven, heat the vegetable oil over medium heat. Add the chopped onions and cook until they are soft and translucent, stirring occasionally.

2 Add the minced garlic and cook for an additional 1-2 minutes, stirring constantly to prevent it from burning.

3 Add the tomato paste to the pan and stir well to combine with the onions and garlic.

4 Add the lamb or beef to the pan and stir well to coat the meat with the tomato paste mixture.

5 Add the cumin, coriander, paprika, cayenne pepper, and turmeric to the pan and stir well to coat the meat evenly with the spices.

6 Add 2 cups of water to the pan and stir well to combine with the meat and spices.

7 Bring the mixture to a boil, then reduce the heat to low and cover the pan.

8 Simmer the mixture for 1-1.5 hours, stirring occasionally, until the meat is tender and the sauce has thickened.

9 Season with salt and black pepper to taste, and serve hot with rice or naan bread.
