Palak paneer is a popular Indian vegetarian dish made with spinach and paneer (Indian cottage cheese). Here's a step-by-step recipe for making palak paneer:
Ingredients:
500 grams spinach (palak), washed and chopped
250 grams paneer, cut into cubes
1 onion, chopped
1 tomato, chopped
1 teaspoon cumin seeds (jeera)
1 teaspoon ginger paste
1 teaspoon garlic paste
1 teaspoon garam masala
1 teaspoon coriander powder
1/2 teaspoon red chili powder
Salt to taste
2 tablespoons oil
2 tablespoons butter
1/4 cup cream (optional)
Instructions:
Blanch the spinach: Bring a pot of water to a boil, add the chopped spinach and let it boil for 2-3 minutes. Drain the water and immediately rinse the spinach with cold water to stop it from cooking further. Then blend the spinach to a smooth paste using a blender or food processor.
Heat a pan with 2 tablespoons of oil, add 1 teaspoon cumin seeds, and let them splutter.
Add 1 chopped onion and sauté until translucent.
Add 1 teaspoon ginger paste and 1 teaspoon garlic paste, and sauté for a minute until the raw smell disappears.
Add 1 chopped tomato and cook until it turns soft.
Add 1 teaspoon coriander powder, 1/2 teaspoon red chili powder, 1 teaspoon garam masala, and salt to taste. Mix well.
Add the spinach puree to the pan and mix well. Let it cook for 5-7 minutes until the spinach is cooked and the raw taste disappears.
Add the paneer cubes to the pan and mix well. Cook for another 2-3 minutes until the paneer is heated through.
Add 2 tablespoons of butter to the pan and mix well.
Add 1/4 cup of cream (optional) to the pan and mix well. Turn off the heat.
Serve hot with naan, roti, or rice.
